Heavenly Pumpkin Brownies

Make these NOW, but don’t eat half the pan or you’ll feel a little sick. Trust me.

Heavenly Pumpkin Brownies

4 large eggs
2 cups sugar
1 cup butter, melted
1 cup canned pumpkin
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon cinnamon

Frosting:

8 ounces cream cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla extract
2 cups powdered sugar

Preheat oven to 350 degrees.

1. In a large mixing bowl of an electric mixer, beat the eggs well, add in the sugar and butter and mix well. Add the pumpkin and vanilla and mix. Add the flour and spices and mix well. Spread in a 9 X 13-inch greased pan.

2. Bake for 25-35 minutes or until a toothpick comes out clean. Let cool.

3. To make frosting: In a small bowl, beat cream cheese, butter, vanilla and powdered sugar until just mixed, careful not to over mix.

When the brownies are cool, frost. (I only needed to use about 1/2 of the frosting.) You can sprinkle chopped nuts on top of the brownies, if desired. Cut into squares and serve. Enjoy.

    oh dern you. that looks so good. now I have to stop by the grocery store on the way home, so I can make this tonight… my husband will be eternally grateful that you posted this today. he told me yesterday that he was craving fall desserts. thanks for saving me from the cookbooks.

    OMG, these are almost the exact recipe I use! I think I’ll have to whip up a batch over the weekend – the first thing to cook in my new house!

    PS – If you swap out the vanilla extract in the frosting for maple extract, it takes it to a whole NEW (divine) level. :)

    These. Are. Awesome.

    I did a little taste test, though. I topped some bars with a dusting of powdered sugar. (Okay, it was a heavy dusting.) Delicious, and travels well.

    I also topped some with a honey-mascarpone frosting.

    Honey Mascarpone Frosting
    Recipe by Giada DeLaurentiis
    3 ounces cream cheese, room temperature
    6 tablespoons unsalted butter, room temperature
    1/3 cup mascarpone cheese, room temperature
    3 tablespoons honey

    Mix all ingredients with a hand mixer, or using the whisk attachment on your stand mixer. It’s a soft frosting, and a bit less sweet than the vanilla-cream cheese-butter-sugar frosting in the original. It’s also great on banana bread. (Trust me, it’s worth buying the snooty cheese!)

    Ah, Relish, right!? Just joined based on your recommendation and I LOVE it already! I do have a lot of technical questions… like, can you assemble a weekly meal plan from “favorites” or do you have to choose from the current weekly selections? Do they have a “help” section?? Overall, great site, though! Having the Broiled Flank Steak and Goat Cheese on a Bed of Mixed Greens for dinner tonight! Pumpkin brownies are on the agenda for the weekend!
