Odds and Ends

1. We had such a fun weekend in Mammoth – plenty of snow, temps in the 50s…we couldn’t have asked for more. (We even got a family self portrait on the gondola. Miraculous, I say!) I’m sorting through the photos this weekend, and hope to have a post up Monday.

2. This week’s Beauty and the Beat column is taking a step back from cosmetics and focusing on the true ways to get glowing skin. (Which involves a photo of me at 5:50 a.m., 39 seconds after I woke up. Hot.)

3. This is EXACTLY why I am in the process of bikini laser hair removal right now – no more awkward (and painful) Brazilian waxes. Allison’s hilarious recount reminds me that I made the right decision.

4. I’m on my fourth year of using the Relish meal planning service, but sometimes I want even more simplification for weeknight dinners. Asha’s weekly plan hits the nail on the head. (Three words for you – ROTISSERIE CHICKEN CLUB. Awwww yeahhhhh.)

5. I’m clearly hormonal because these photos of little birds almost had me in tears. What? National Geographic sent me this book about a year ago, and I think it’s finally time to bust it out with the kiddos. Do you bird watch? Can you envision ME bird-watching?

6. Speaking of birds, one of my very favorite bloggers in the world, Miss James of Bleubird, has a series called Bird Food, in which she photographs her little one’s meals. If you find yourself needing a little toddler food inspiration, you must check out her posts. (Plus, little Birdie is about the most adorable toddler ever. I think she and Whoorlita would be fast friends.)

7. Did you see Shutterbean’s new web design? I don’t know how it’s even possible to love Tracy and her website more, but I do.

1. Tom Colicchio – I don’t know what it is, but I have had several impure thoughts about this man. Very much looking forward to the Top Chef premiere tonight.

2. Retro hairstyles – I’ve always had a soft spot for 40’s and 50’s hairstyles, and I’ve recently become obsessed with YouTube how-to videos. This gal is awesome, and I just now realized that a very brief segment of her video was shown on my Nightline segment.

3. NARS Dolce Vita lipstick with Chanel Glossimer in Pagoda on top – Shiny, pinky-rose perfection.

4. Salted Caramel Hot Chocolate – I’ve only had one of these, but it damn sure changed my life.

5. Ashley G’s Beard illustrations – I want to create a room where one wall is covered entirely in these beard illustrations. I dig a man with a good beard.

6. J Brand black cigarette jeans – My #1 clothing staple this fall.

7. Twilight movie – I’m not embarrassed to admit that my tickets have already been purchased. (Picture it now…Whoorl and 120,000 14-year-olds.)

8. Hayden Harnett bag – My new birthday gift. I’m not going to lie, I don’t know if it will fully take the place of my Gray Havana Hobo, but it is a nice change.

9. Super Hopeless Romance – Although fiction, this blog has sucked me into Cordy’s vortex. GET IT TOGETHER, SETH.

10. Relish Meal Planning System – This is beyond incredibly awesome. I love to cook, but have trouble planning my weekly menus ahead of time. This system lets me choose my weekly dinners, creates a grocery list (down to specific aisles) and takes all guesswork out of the planning process. The yummy recipes are just the icing on the cake. (This week’s menu includes dishes such as Buttermilk Unfried Chicken, Huevos Rancheros, Porcini Mushroom and Walnut Penne…)

11. Backyardigans Super Spy episode featuring Cyndi Lauper – Wito is obsessed with the Backyardigans. I am obsessed with the episodes that feature my favorite 80’s musicians.

12. This video of Andrew Bird – Sorry Tom, Andrew is still my main man.

13. The Blue-Green crayon – Best color ever.

That button is genius, right? Thanks for the nice comments about my belly, by the way. I have to admit my favorite was an incoming link about how good I looked for 19 months pregnant. 19 MONTHS pregnant? Hell, I LOOK FANTASTIC.

The belly is definitely popping, which is perfectly coinciding with my incessant need to graze like a cow all day long. Speaking of…

I love to prep. I love to cook. I love to eat. I HATE TO PLAN MY MEALS.

I’ve talked about this before, and how the Relish System totally saved my ass in the kitchen. Seriously, you guys. I’ve been consistently using their menus and grocery lists on a weekly basis for almost 2 years. 2 years! That right there is true love in my books, for the last time I showed that level and length of commitment was to my Duran Duran poster (MARRY ME, NICK RHODES!!!) from 1982 to 1984.

Back to the planning thing. Although I have my dinners beautifully covered on a weekly basis, I am still falling short on planning/purchasing items for other meals, such as snacks. Seeing as I feel the need to eat a little something, oh, about every 26 minutes, I am at a loss as to what I should buy for healthy snacks in between meals. Right now, I am eating more baby carrots and radishes than you can shake a stick at. I am turning a lovely shade of rosy orange, though!

What are some of your favorite moderately healthy snacks to keep around the house? Help me! DO IT FOR THE BABY.

Recipes and Stuff

I tweeted about my dinner last night and some peeps wanted the recipes, so here I am! With recipes! I aim to please.

This is actually fantastic because it’s the perfect time to tell you about what keeps me from entering the Land of Peanut Butter and Jelly Sandwiches for Dinner Every Night on a weekly basis.

(p.s. – This is not a review of any sorts. I read about this service on Twitter long ago and have been using it ever since. I haven’t been contacted by the company, I don’t know who runs the company, I don’t know anything except that I LOVE RELISH MEAL-PLANNING. Holla!)

If you like to cook, but hate planning and choosing your menus, this is sooooo for you.

I won’t go on and on, but basically, you choose your weekly recipes from a crapload (hahaaaa, potty training is getting to me) of great options, the grocery list is tabulated for you, you print your shopping list in PDF form (organized by grocery store AISLES, awwww yeah), buy your groceries and voila, you have everything you need for a week’s worth of seriously delicious dinners for 7 bucks a month. Best 7 bucks I’ve ever spent.

I have been using this service for 11 months now, and the recipes are fantastic. It makes my life so much easier because if it was left up to me, I would spend hours looking for recipes online, only to start playing old school Donkey Kong on my laptop and forget what I was doing entirely. Hence the whole PB&J Land issue.

Anyway, check it out. (You can view sample menus here.) It’s awesome and has totally changed the way I approach cooking for my family.

In other news, I should have a new potty training post up soon. I guess it takes the Pull-Ups team some time and effort to edit through the sea of  “I HATE POTTY TRAINING STAB STAB STAB,” “SOMEBODY KILL ME NOW” and “GO TO HELL, PISS ASS ELMO UNDERWEAR” statements.

(Okay, I really didn’t write those things. I think. It’s all a blur.)

(Although, things have really taken a positive turn as of late. Double holla!)

Okay, recipes!

BASIL JACK MEATLOAF

Prep and cook time: 60 minutes, Serves 4

1 pound ground beef
1 cup ketchup, divided
1 cup breadcrumbs
1/2 red onion , chopped
3/4 cup fresh basil, chopped
1 cup Monterey Jack cheese, shredded
2 large eggs
1 teaspoon garlic, minced
olive oil cooking spray

Preheat oven to 400 degrees.

[1] Combine the ground beef, half of ketchup, breadcrumbs, onion, basil, cheese, eggs and garlic. Mix well. Coat a loaf pan with cooking spray. Shape the meat mixture into a loaf to fit into pan.

[2] Spread remaining ketchup over the top of the meatloaf and bake for 45 minutes or until thoroughly cooked. Let stand for 10 minutes before slicing and serving.

CHEDDAR MASHED POTATOES

Prep and cook time: 25 minutes

4 medium baking potatoes , peeled and cut into 1-inch chunks
3/4 cup milk
3 tablespoons butter
1/2 cup extra sharp white cheddar cheese, grated
coarse salt and freshly ground pepper, to taste
2 green onions , chopped

[1] In a medium saucepan, cover potatoes with 2 inches of water. Bring to a boil; reduce to a simmer and cook until potatoes are tender, 15 minutes.

[2] Drain potatoes and return to pan.

[3] In a small saucepan, bring milk and butter to a simmer over medium heat. Pour half of hot milk mixture over potatoes. Using a potato masher, mash potatoes until just smooth, gradually adding enough of remaining milk mixture to reach desired consistency. Mix in cheddar; season with salt and pepper. Serve garnished with green onion and additional cheddar cheese.
